Discover the exquisite world of Clase Azul

Clase Azul Puebla celebrates the true historic significance of Cinco de Mayo, and the cultural exchange between Mexico and France. 

During the conflict between Mexico and France, legend has it that, some notable figures such as Carlota and Maximiliano -monarchs -enjoyed French dishes, in many cases seasoned with Mexican ingredients. Also, Mexican President Porfirio Díaz offered French-style banquets prepared by the French Chef Sylvain Doumont. 

We want to pay tribute to this exchange of cultures through these four dishes that combine techniques from France with products and techniques rooted in Mexico. These dishes sought to elevate Clase Azul Puebla's flavor were chosen because their ingredients are accessible anywhere in the world.
